Perfect Chicken and Quinoa

There are a few meals that I make that the kids really like and some they are not so fond of.  I remember when I was a kid, there were definitely meals that I loved that my mom made and some that I dreaded (sorry mom).  I found a recipe online and for the life of me, I can’t remember where I found it.   If you recognize this recipe let me know and I will add the link:)

It’s funny because this chicken is really easy and healthy and the boys just can’t get enough.  So here is the recipe:

PERFECT CHICKEN

2-4 boneless, skinless chicken breasts

1/2 t salt

1/2 t pepper

1/2 t garlic powder

1/2 t onion powder

1/2 t paprika

2-3 T olive oil

Preheat oven to 350 degrees.  Pat dry breasts on a paper towel.  Mix spices in a small bowl.  Coat the chicken with the seasoning on both sides.  Pour olive oil in an oven safe pan (big enough to easily fit all breasts) and heat to medium high.  When hot, add chicken and cook 2-3 minutes per side.  Place pan in oven (uncovered) and cook for 25 minutes (or until juices run clear).  Let sit on a plate 5-10 minutes before cutting.

TIP:  Make big batches of the seasoning mix and place in an airtight container so that you don’t have to measure each spice out every time.

Easy right?!  The boys ask for it often and they say the breasts are “so juicy”.  Love it!  This chicken can be used as-is, in fajitas, for stir fry, or shredded on sandwiches.  It’s very versatile!

Along with the chicken I also made Quinoa.  My youngest loves it and my oldest didn’t want to try it, so I guess to each his own.  I made the quinoa as per the directions on the bag except I used low sodium chicken broth instead of water.  I sauteed celery/carrots/onions in a pan with olive oil before I made the quinoa and added in the veggies after.  Very easy and delicious.  You can use any veggies you may have in your fridge. I have used mushrooms, zucchini, peppers etc.  It all tastes good:)

I also bought a salad at Costco and served that as well.  My boys love salad so I try to chop up a few veggies and add them in just for good measure;)

While doing Laura’s January Reset I have realized how easy it is to add in veggies throughout the day.  Cutting out the processed stuff has been a bit more difficult and I find myself having to think harder about what is going into my mouth, but it is so worth it!

I have been eating clean for a little over a week now and I feel great that I am treating my body well:)  I am slowly implementing these concepts into the family meals, but am not there completely.  It will have to be a slower process with them, but we will get there.

For years I felt guilty about what I let my kids eat.  But, I have learned that I am not perfect and I have to take things one day at a time.  Slowly adding in the good stuff and taking away the unhealthy stuff:)
